The NV Fino Viña Corrales Pago Balbaína was bottled in the spring of 2023, as they try to bottle in the spring when the flor is more active. They have realized that the wine has a lot of influence from the weather of the year, and 2023 was a warm year. This is closer to the 2021 bottling than the 2022. It´s creamy, vinous, round and lush. They are now refilling the barrels with wine from their own vineyards, and the third criadera is almost 100% from their own vineyard. This is very tasty, almost salty and with a marked bitter twist in the finish, briny, with reminiscences of green olives and esparto grass. They filled some 8.900 bottles,, which is more or less what they want to bottle to keep the average age and the character of the wine.

La nueva saca 2023 de Viña Corrales ya está disponible, el exclusivo fino de Peter Sisseck (Dominio de Pingus) y Carlos del Río (Hacienda Monasterio) de su Bodega San Francisco Javier en Jerez. Para Peter, el gran vino blanco de España es el Jerez. Nace en una viña singular "Viña Corrales" de 8 hectáreas de palomino plantado hace 30 años en el Pago Balbaína, en uno de los viñedos históricos más apreciados del Marco de Jerez.

Tras una larga crianza de 9 años por el sistema de soleras y criaderas, la saca se realizó en mayo de 2023, cuando la levadura que forma el velo de flor estaba más activa, en un año en el cual se han dado las condiciones para una crianza biológica particularmente sana.

Edición limitada a 8.900 botellas.
